The cutting down of the artichokes is a milestone event here. As tall as their near relative, the cardoon, this particularly variety throws up stems over six foot tall that keep us company in the garden throughout the winter, the furry contents of their sculptural seed heads serving as a wonderfully snug nest padding for enterprising birds in early spring. We’ll keep the heads around for a while yet, but it’s time to fell the stems, leaving only the wonderfully fresh, grey-green mound of leaves behind.
